Ingredients
1.5 lbs boneless skinless chicken thighs
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
0.5 teaspoon black pepper
1 cup grated parmesan cheese
2 cloves minced garlic
1 tablespoon chopped parsley
8 wooden or metal skewers
Instructions
Whisk olive oil, lemon juice, lemon zest, oregano, garlic powder, onion powder, salt, and black pepper in a bowl
Marinate chicken thighs for 20 minutes (or up to overnight)
Thread marinated chicken onto skewers, alternating with parsley if using
Preheat grill to medium-high heat (around 375°F)
Grill skewers 5 minutes per side until golden brown and chicken is fully cooked
Sprinkle grated parmesan and minced garlic over hot skewers before serving
Notes
For extra flavor, add fresh thyme or rosemary to the marinade
Use halal-certified parmesan if available
Skewers can be broiled as an alternative to grilling
Best when served immediately, but leftovers can be refrigerated in an airtight container for up to 3 days
