Ingredients
2 tablespoons olive oil
6 medium Russet potatoes (peeled and cubed)
1 medium onion (chopped)
3 cloves garlic (minced)
4 cups chicken broth
1 cup milk
1 cup shredded sharp cheddar cheese
1/2 cup crumbled smoked turkey (halal)
1/2 cup chopped green onions (divided)
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1/4 teaspoon black pepper
2 tablespoons sour cream (for topping)
Instructions
Heat olive oil in a pot over medium heat. Sauté onion and garlic until fragrant.
Add cubed potatoes and chicken broth. Bring to a boil, then simmer 15 minutes until tender.
Purée half the soup with an immersion blender or regular blender.
Stir in milk, salt, garlic powder, onion powder, paprika, and black pepper. Simmer 5 minutes.
Blend in cheddar cheese until melted and smooth.
Serve in bowls topped with smoked turkey, remaining green onions, and a dollop of sour cream.
Notes
Substitute smoked turkey with halal-certified baited turkey or shredded cooked chicken.
Add 1/2 cup frozen peas for extra texture.
For meal prep, freeze soup without sour cream and cheese toppings (add fresh when reheating).
