Ingredients
8 oz (225g) penne pasta
1 can (5 oz/140g) tuna in water, drained
1/4 cup capers, rinsed
1 lemon (zested and juiced)
2 tbsp extra-virgin olive oil
1/2 cup cherry tomatoes, halved
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1 clove garlic, minced
Salt and pepper to taste
Instructions
Cook pasta according to package instructions (do not overcook). Rinse with cold water to cool.
In a large bowl, whisk lemon juice, olive oil, capers, garlic, salt, and pepper to create a dressing.
Add drained pasta, tuna, cherry tomatoes, red onion, and parsley to the bowl. Toss until well combined.
Adjust seasoning to taste. Serve chilled or at room temperature.
Notes
Add arugula or spinach for extra greens. Substitute lemon juice with white grapefruit juice if needed.
For a vegetarian version, replace tuna with chickpeas or white beans.
Store in an airtight container in the refrigerator for up to 2 days.
