Ingredients
1 cup graham cracker crumbs
4 tablespoons melted butter, unsalted
8 oz cream cheese, softened
1/4 cup granulated sugar
1 teaspoon pure vanilla extract
1 cup cold heavy whipping cream
1/4 cup powdered sugar
1 1/2 cups fresh strawberries, sliced or whole (for topping and filling)
Instructions
In a small bowl, mix graham cracker crumbs with melted butter until combined.
Pack the mixture into the bottom of 8 small cups, pressing firmly to form a crust.
In a medium bowl, beat cream cheese with granulated sugar and vanilla on medium speed until smooth.
In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
Fold whipped cream gently into the cream cheese mixture.
Divide the filling evenly among the prepared cups.
Top each cup with fresh strawberries.
Chill for at least 1 hour before serving.
Notes
For best results, use cold ingredients to help the mixture set.
Toppings may be refrigerated for up to 24 hours. Bring to room temperature before serving for optimal texture.
These can be made in advance and stored in the fridge for up to 2 days.
