Ingredients
4 boneless, skinless chicken breasts (cooked in broth)
16 oz pre-packaged gnocchi (Toscano or russet potato style)
1 onion (diced)
2 carrots (sliced)
2 celery stalks (chopped)
4 cloves garlic (minced)
4 cups low-sodium chicken broth
1 (14 oz) can heavy cream (half-n-half acceptable)
2 cups fresh spinach (shredded)
2 tbsp olive oil
1 tbsp fresh thyme
1 tbsp fresh sage (chopped)
Salt and freshly ground black pepper to taste
Instructions
Heat olive oil in a large pot over medium heat
Sauté onion, carrots, and celery until softened (5-7 minutes)
Add garlic; cook 1 minute until fragrant
Pour in chicken broth and bring to simmer
Add seasoned chicken breasts and cook covered until tender (15-20 minutes)
Remove chicken and shred into bite-sized pieces
Optional: Hold cooked broth/chorge for later use
Add shredded chicken, heavy cream, and herbs to broth
Gently swirl in gnocchi and simmer until warmed through
Remove from heat, stir in fresh spinach until wilted
Notes
Use store-bought gluten-free gnocchi if needed
Add frozen peas as optional protein-complement
Keep garlic cooking time short to avoid bitterness
Add lemon juice to brighten flavor if desired
Store in airtight containers; reheat on stovetop
