½ cup grated Parmesan cheese
½ cup breadcrumbs (plain or panko)
1 tsp garlic powder
1 tsp dried oregano
½ tsp dried thyme
1 tsp salt
½ tsp black pepper
2 large eggs, lightly beaten
2 tbsp olive oil
Fresh parsley (optional, for garnish)

Instructions

Preheat oven to 400°F (200°C)
Line a baking sheet with parchment paper
In a shallow bowl, combine Parmesan, breadcrumbs, garlic powder, oregano, thyme, salt, and pepper
In another bowl, whisk eggs
Dip each chicken thigh into egg, then coat thoroughly with the Parmesan mixture
