Ingredients
4 boneless, skinless chicken thighs (5–6 oz each)
½ cup grated Parmesan cheese
½ cup breadcrumbs (plain or panko)
1 tsp garlic powder
1 tsp dried oregano
½ tsp dried thyme
1 tsp salt
½ tsp black pepper
2 large eggs, lightly beaten
2 tbsp olive oil
Fresh parsley (optional, for garnish)
Instructions
Preheat oven to 400°F (200°C)
Line a baking sheet with parchment paper
In a shallow bowl, combine Parmesan, breadcrumbs, garlic powder, oregano, thyme, salt, and pepper
In another bowl, whisk eggs
Dip each chicken thigh into egg, then coat thoroughly with the Parmesan mixture
Place on baking sheet and drizzle with olive oil
Bake for 25 minutes (do not flip, as crust will crack)
Let rest for 5 minutes before garnishing with parsley
Notes
Use freshly grated Parmesan for better crispiness
For extra flavor, add ½ tsp lemon zest
Use bone-in thighs for richer flavor (adjust cooking time to 30–35 minutes)
