4 boneless skinless chicken breasts
2 ripe peaches, sliced
6 cups mixed green salad
1/2 cup cherry tomatoes, halved
1 small red onion, thinly sliced
1/4 cup crumbled feta cheese
2 tbsp olive oil

3 tbsp honey
2 tbsp Dijon mustard
1 clove garlic, minced

Instructions
Preheat grill to medium-high heat
Season chicken breasts with salt, pepper, and garlic
Grill chicken 5-6 minutes per side until fully cooked
Brush peaches with olive oil and grill slices 3-4 minutes until charred and tender
In a jar, whisk olive oil, lemon juice, honey, and mustard to make dressing
In a large bowl, toss greens, cherry tomatoes, and red onion
Top with grilled chicken and peaches
Sprinkle feta and drizzle with honey mustard dressing
Garnish with basil

Use semi-ripe peaches for better caramelization
Let chicken rest 5 minutes before slicing
