- 2 cups boiling water
- 1 cup cold water or unsweetened almond milk
- 1 cup full-fat Greek yogurt
- 1 cup sugar-free whipped cream
- 1/2 cup fresh crushed pineapple, drained
- 1/2 teaspoon coconut extract
- 2 to 3 drops pink food coloring, optional
- 1 to 2 teaspoons liquid stevia or monk fruit sweetener
Instructions
- Boil exactly 2 cups of water until bubbles form vigorously.
- Pour the boiling water into a large mixing bowl.
- Add both packets of sugar-free pink gelatin powder immediately.
- Stir constantly for 2 minutes until the gelatin dissolves completely.
- Add cold water or unsweetened almond milk to the hot gelatin mixture.
- Stir until fully combined.
- Pour half of the cooled gelatin mixture into an 8-by-8-inch baking dish or silicone container.
- Refrigerate the first layer for 90 minutes until set but still slightly tacky on top.
- Combine Greek yogurt and sugar-free whipped cream in a separate bowl.
- Add coconut extract and liquid sweetener.
- Fold gently until smooth and creamy.
- Stir in the drained crushed pineapple.
- Remove the partially set gelatin layer from the refrigerator.
- Spread the yogurt and pineapple mixture evenly over the tacky gelatin base.
- Pour the remaining room-temperature gelatin mixture slowly over the yogurt layer.
- Return the dish to the refrigerator for 4 hours or until fully set.
- Let the dessert rest at room temperature for 5 minutes before serving.
- Slice into 8 servings and enjoy cold.
Notes
