Ingredients
8 oz three cheese tortellini
1 cup cherry tomatoes, halved
1 small cucumber, diced
1/2 red onion, finely chopped
1/2 cup crumbled feta cheese
1/4 cup red wine vinegar (optional: substitute with white wine vinegar or lemon juice)
2 tbsp olive oil
1 tbsp lemon juice
1 clove garlic, minced
1 tbsp fresh basil, chopped
1/2 tsp fresh oregano, chopped
Salt and pepper to taste
Instructions
Bring a large pot of salted water to a boil. Cook tortellini according to package instructions until al dente. Drain and rinse under cold water to cool.
In a large bowl, combine cooled tortellini, cherry tomatoes, cucumber, and red onion. Gently mix to combine.
In a small bowl, whisk together vinegar, olive oil, lemon juice, garlic, basil, oregano, salt, and pepper.
Pour dressing over tortellini mixture. Gently toss until evenly coated. Stir in crumbled feta.
Chill salad for at least 30 minutes before serving. Serve chilled.
Notes
Cherry tomatoes can be substituted with diced bell peppers or shredded carrots.
Feta can be replaced with ricotta salata or cubed mozzarella.
Dressing can be prepared up to 24 hours in advance. Store in an airtight container in the refrigerator.
