Ingredients
8 oz cooked pasta (shell or penne)
2 cups shredded rotisserie chicken
1/2 cup halal imitation bacon, chopped
1/2 cup mayonnaise
1/4 cup ranch seasoning mix
1/4 cup Greek yogurt (optional for creaminess)
1/2 cup shredded carrots
1/2 cup cherry tomatoes, halved
1/4 cup red onion, sliced
1 tbsp lemon juice
1 tbsp olive oil (for sautéing bacon)
Salt and pepper to taste
Instructions
Cook pasta according to package instructions
Sauté halal bacon in olive oil until crispy, drain on paper towels
In a large bowl, mix mayonnaise, ranch seasoning, Greek yogurt, and lemon juice
Add cooked pasta, shredded chicken, imitation bacon, carrots, tomatoes, and red onion to the dressing
Toss until evenly coated
Season with salt and pepper
Chill for 10 minutes before serving
