Ingredients
1 (3-4 lb) rotisserie chicken, shredded
1.5 cups ripe tomatoes, finely diced
2 cloves garlic, minced
2 tbsp olive oil
1 tbsp fresh basil, chopped
1 tsp salt
1/2 tsp black pepper
12 slices crusty bread (such as baguette or sourdough)
2 tbsp balsamic glaze
1 tbsp extra virgin olive oil, for drizzling
Instructions
Preheat oven to 375°F (190°C)
Shred the rotisserie chicken and set aside.
In a small bowl, combine the diced tomatoes, minced garlic, 2 tbsp olive oil, basil, salt, and pepper. Let sit while the bread toasts.
Arrange bread slices on a baking sheet and lightly brush with olive oil.
Toast the bread in the oven for 10 minutes or until lightly golden and crisp.
Top each toast with bruschetta mixture and a generous amount of shredded chicken.
Drizzle balsamic glaze over the top before serving.
Notes
Make ahead tip: Prepare the bruschetta topping and shredded chicken up to one day in advance. Store separately in the fridge. Bake and assemble the toasts just before serving.
For a heartier version, consider adding mozzarella cheese or a drizzle of balsamic vinegar with extra garlic on the bread before toasting.
