Ingredients
2 tbsp unsalted halal-certified butter
1 medium onion, finely diced
2 garlic cloves, minced
1 tbsp grated fresh ginger
2 cups store-bought tomato sauce (no alcohol-additives)
1/2 cup heavy cream (non-alcoholic if needed)
1 tsp ground cumin
1 tsp ground turmeric
1 tsp garam masala
1/2 tsp chili powder (adjust to taste)
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chopped fresh cilantro
2 cups shredded rotisserie chicken breast
Instructions
Preheat oven or rotisserie chicken to room temperature
Melt butter in a large skillet over medium heat
Sauté onion until golden and softened (6-8 minutes)
Add garlic and ginger; cook for 1 minute
Stir in cumin, turmeric, chili powder; cook 2 minutes
Pour in tomato sauce and simmer 10 minutes
Blend sauce until smooth, return to skillet
Add heavy cream, salt, and black pepper; mix thoroughly
Fold in shredded chicken and warm gently (5-8 minutes)
Stir in garam masala and cilantro before serving
Notes
Use homemade tomato sauce as an alternative
Garnish with extra cream or yogurt for decadence
