Ingredients
2 cups all-purpose flour
1 packet active dry yeast
3/4 cup warm water
1 tablespoon sugar
1 teaspoon salt
2 tablespoons olive oil for crust
1 12-ounce rotisserie chicken, shredded
1 1/2 cups fresh mozzarella pearls or sliced
1 cup diced ripe tomatoes
1/4 cup olive oil for toppings
1/4 cup fresh basil leaves, chopped
Garlic powder to taste
Salt and pepper to taste
Instructions
Preheat oven to 425°F (220°C) and place baking sheet in oven during preheat
In a large bowl, combine flour, sugar, and salt. Dissolve yeast in warm water and add to dry ingredients with 1 tbsp olive oil. Knead for 5-7 minutes until smooth
Let dough rise in a greased bowl for 10 minutes
Roll dough into a 12-inch pizza shape on a lightly floured surface
Spread 1/2 cup tomato sauce evenly over crust
Layer shredded chicken, mozzarella pearls, and remaining diced tomatoes
Drizzle with 1 tbsp olive oil and sprinkle garlic powder, salt, and pepper
Bake until crust is golden and cheese melts (12-15 minutes)
Top with fresh basil before serving
Notes
Use pre-cooked rotisserie chicken for maximum time savings
Buffalo mozzarella creates the best texture and flavor
Can be frozen after baking for up to 1 month
For extra flavor, add a splash of balsamic glaze before serving
