Ingredients
2 cups shredded rotisserie chicken
1 large head romaine lettuce, chopped
4 hard-boiled eggs, chopped
1 pint cherry tomatoes, halved
1 medium cucumber, sliced
2 avocados, diced
1/2 cup red onion, sliced
1/2 cup feta cheese, crumbled
3 tablespoons olive oil
2 tablespoons red wine vinegar (alcohol-free substitute recommended)
1 tablespoon Dijon mustard
Salt and black pepper to taste
Instructions
Chop and portion all ingredients into a large bowl or divide into four individual bowls
Toss chicken with dressing until combined
Top with romaine, eggs, tomatoes, cucumber, avocado, and red onion
Sprinkle feta cheese over the salad
Drizzle additional olive oil and vinegar to taste
