4 (6-inch) flatbreads
2 pounds halal rotisserie chicken, shredded
8 ounces shredded mozzarella or cheddar cheese
1/4 cup mayonnaise
2 tablespoons yellow mustard
1 tablespoon fresh lemon juice
1 clove garlic, minced
1 tablespoon olive oil
2 cups shredded romaine lettuce
1 1/2 cups sliced cherry tomatoes
4 tablespoons chopped cilantro or parsley
1/2 cup diced avocado (optional)
Salt and black pepper to taste

Instructions

Preheat oven to 375°F (190°C) and position rack in upper third. If using skillet, heat over medium-high.
In a small bowl, mix mayonnaise, mustard, lemon juice, and minced garlic to create sauce.
Brush each flatbread lightly with olive oil. Warm them in skillet for 1-2 minutes until golden, or place directly on oven rack for a few minutes before assembling.
Spread 2 tablespoons of sauce over each flatbread. Layer with 1/2 cup shredded chicken, 1/4 cup cheese, and optional toppings (lettuce, tomatoes, avocado, herbs).
For skillet cooking, cover with a lid and cook 1-2 minutes until cheese melts. For oven, broil 3-5 minutes until cheese is bubbling and flatbreads are crisp.
Let rest 5 minutes before slicing and serving.
