Ingredients
1 (4-5 lb) rotisserie chicken, skin and bones removed, shredded
2 cups cooked white rice (eel preferred)
2 cups fine dice cucumber
2 cups fine dice tomatoes
1/2 cup thin slice red onion, peeled
1 cup plain Greek yogurt, full fat
2 tbsp grated fresh cucumber
1 tbsp chopped fresh dill
2 cloves garlic, minced
1 tbsp olive oil
2 tbsp fresh lemon juice
1/4 cup crumbled feta cheese
1/4 cup pitted olives
1/2 tsp ground oregano
1/2 tsp ground cumin
1/2 tsp sweet paprika
Salt and black pepper to taste
Optional: 1/2 cup chopped fresh parsley or cilantro
Instructions
Meanwhile, chop cucumber, tomatoes, red onion, and herbs.
Combine Greek yogurt, grated cucumber, garlic, dill, 1 tbsp lemon juice, and olive oil in a bowl.
Divide cooked rice into four bowls.
Top each with shredded chicken, diced veggie mixture, and 1 tbsp tzatziki-style sauce (yogurt mixture).
Sprinkle with feta cheese and olives, then season with oregano, cumin, paprika, salt, and pepper.
Drizzle additional olive oil and freshly squeezed lemon juice if desired.
Serve immediately or refrigerate for 20-30 minutes to let flavors meld.
Notes
Chill assembled bowls for best flavor absorption
Adjust tzatziki thickness by adding 1-2 tbsp water if too thick, or omit liquid if yogurt is runny
