Ingredients
1 rotisserie chicken (3.5–4 lbs)
8 soft slider buns (potato or brioche)
8 oz fresh mozzarella cheese, thinly sliced
2 medium tomatoes, sliced
1/2 cup basil pesto
3 cups arugula
Salt and pepper to taste
Instructions
Shred rotisserie chicken, discarding skin and bones
Lightly toast slider buns in a skillet or oven until golden
Spread 1 tablespoon pesto on each bottom half of the buns
Layer 1-2 slices of mozzarella, 1/3 cup shredded chicken, and 2 slices of tomato over the pesto
Top with arugula and remaining pesto
Press buns together gently and serve immediately
