Ingredients
1 (3-4 lb) rotisserie chicken, shredded
1 cup long-grain rice, cooked
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup diced cucumbers
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1/4 cup olive oil
2 tbsp all-purpose yogurt (plain or Greek)
3 cloves garlic, minced
1 tsp ground cumin
1 tsp paprika
1/2 tsp ground cinnamon
1/4 tsp salt
1/2 cup cooked broccoli florets (optional)
1/4 cup sliced red onions (optional)
Instructions
Shred chicken and season with cumin, paprika, cinnamon, salt, and 2 tsp olive oil.
In a small bowl, mix yogurt, remaining olive oil, and minced garlic for sauce.
Warm cooked rice in a skillet for 2-3 minutes.
Assemble bowls with rice, chicken, lettuce, tomatoes, cucumbers, herbs, and broccoli.
Drizzle with garlic yogurt sauce and garnish with red onions if using.
Serve immediately or chill for meal prep.
Notes
Use pre-cooked rice for maximum efficiency
Substitute plain Greek yogurt with unsweetened plant-based yogurt if desired
