Ingredients

1 can (28 oz/800g) crushed tomatoes
2 bell peppers, sliced
1 medium onion, diced
3 cloves garlic, minced
2 tbsp olive oil
1 tsp paprika
1 tsp ground cumin
1 tbsp fresh parsley
6 large eggs
200g feta cheese, crumbled
Salt to taste
Black pepper to taste
Optional: 1 red chile pepper for heat

Instructions

Heat olive oil in a skillet over medium heat
Sauté onions until translucent
Add garlic and bell peppers; cook 5 minutes
Stir in tomatoes, paprika, cumin, salt, pepper
Simmer 10 minutes until thickened
Create 6 wells in the sauce and crack eggs into each
Cover and cook 5-7 minutes until eggs are set
Top with crumbled feta
Garnish with fresh parsley

Notes

Use Poblano peppers for smoky flavor
Add spinach or cherry tomatoes as variations
Leftovers keep 2-3 days refrigerated
