Ingredients

  • 14 oz silken tofu, drained
  • 3 tablespoons white miso paste
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 2 fresh garlic cloves, minced
  • 1 teaspoon fresh ginger, peeled and minced
  • 1 teaspoon maple syrup
  • 3 tablespoons water, plus more as needed
  • Pinch of sea salt, optional
  • 1 teaspoon white sesame seeds, optional

Instructions

  1. Open the package of silken tofu carefully over a sink or bowl.
  2. Drain the excess liquid completely.
  3. Let the tofu sit in a fine-mesh strainer for 1 minute.
  4. Transfer the drained silken tofu to a blender.
  5. Break the tofu into 3 or 4 pieces for even blending.
  6. Add white miso paste to the blender.
  7. Add minced garlic and minced fresh ginger.
  8. Pour in rice vinegar.
  9. Add toasted sesame oil.
  10. Add maple syrup.
  11. Start blending on low speed to break down the tofu.
  12. Increase to medium speed and blend for 1 minute.
  13. Pause and scrape down the sides with a spatula.
  14. Add water 1 tablespoon at a time until the dressing reaches your preferred consistency.
  15. Blend on high speed for 30 seconds until completely smooth and creamy.
  16. Taste and add a small pinch of sea salt if needed.
  17. Blend briefly to combine.
  18. Transfer the dressing to a glass jar or airtight container.
  19. Top with white sesame seeds if desired.
  20. Refrigerate until ready to serve.

Notes

Use silken tofu, not firm tofu, for the smoothest texture. Add water slowly so the silken tofu miso dressing recipe stays creamy instead of thin.
