Ingredients

8 bone-in, skin-on chicken thighs (about 4 pounds)
4 cups peeled and sliced fresh peaches
½ cup balsamic vinegar
2 tablespoons olive oil
3 garlic cloves, minced
1 tablespoon honey
1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
½ teaspoon salt
¼ teaspoon black pepper
Optional: Zest of 1 lemon
Or 2 cups frozen peaches (no sugar added)

Instructions

Heat 2 tablespoons olive oil in a large skillet over medium-high. Sear chicken thighs for 3-4 minutes per side until golden; discard excess oil.
In the slow cooker, layer garlic, thyme, balsamic vinegar, salt, pepper, and lemon zest. Add seared chicken thighs.
Top with sliced peaches. Cook on LOW for 4-6 hours or HIGH for 2-3 hours.
Before serving, skim fat from sauce. Transfer chicken to serving dish. Whisk balsamic liquid into reduced glaze and drizzle over chicken and peaches.
Serve over rice, polenta, or couscous.

Notes

Frozen peaches can be added directly from frozen.
Adjust sweet/sour balance by adding more honey/thyme.
Optional: Garnish with fresh mint or additional thyme.
Sauce can be served light or thickened by simmering.
