Ingredients
6 boneless, skinless chicken breasts
1 cup shredded fresh mozzarella cheese
1.5 cups halved cherry tomatoes
2 cups torn fresh basil leaves
1/2 cup balsamic glaze
2 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
1 tablespoon olive oil
Instructions
Season chicken breasts with minced garlic, Italian seasoning, salt, and pepper
Place seasoned chicken in a slow cooker
In a bowl, combine halved cherry tomatoes, remaining garlic, Italian seasoning, and a pinch of salt
Mix until evenly coated
Spread the tomato mixture over the chicken breasts
Drizzle olive oil over the top
Cook on LOW for 4 hours or HIGH for 2 hours until chicken is tender
Remove from slow cooker and brush balsamic glaze evenly over each breast
Top with shredded mozzarella, gently pressing it into the glaze
Cover and let rest for 10 minutes to allow cheese to melt
Garnish with torn basil leaves before serving
Notes
For a richer glaze, reduce 2 cups balsamic vinegar and 2 tbsp sugar in a saucepan until thickened
Substitute cherry tomatoes with halved grape tomatoes if preferred
Letting mozzarella sit on the chicken during rest improves creaminess
Store leftovers refrigerated in an airtight container for 3-4 days
