1.5 pounds boneless chicken breasts
8 slices turkey bacon, halal-friendly option
3 pounds baby potatoes, halved
1 tablespoon olive oil
1 packet ranch seasoning mix
1 cup shredded cheddar cheese
1/4 cup chopped scallions (for garnish)
Salt and pepper to taste

Instructions

Pat chicken breasts dry and season both sides with oil, salt, and pepper
Arrange halved potatoes in the bottom of the slow cooker
Top with turkey bacon slices, overlapping slightly
Layer chicken breasts on top of the bacon
Sprinkle ranch seasoning and remaining salt/pepper evenly over everything
Cover and cook on LOW for 4 to 6 hours
Turn chicken over halfway through cooking
Sprinkle shredded cheese over the dish during the last hour of cooking
Garnish with scallions before serving
