Ingredients
4 boneless, skinless chicken breasts
2 cups fresh spinach, chopped
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated parmesan cheese
1 teaspoon olive oil
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon nutmeg
Salt and black pepper to taste
Instructions
Heat olive oil in a skillet over medium heat. Sear chicken on both sides until browned (1-2 minutes per side). Transfer chicken to the slow cooker.
Sauté garlic in the same skillet for 30 seconds, then add oregano, basil, and nutmeg. Pour garlic mixture into the slow cooker.
Pour heavy cream into the slow cooker and season with salt and pepper. Cook on Low for 4 hours or High for 2.5 hours.
Stir in chopped spinach until wilted (last 20-30 minutes of cooking). Just before serving, stir in parmesan cheese until sauce thickens.
Notes
Use a food processor to mince garlic quickly.
For extra creaminess, add 2 tablespoons of additional parmesan.
Replace heavy cream with full-fat coconut cream for a non-dairy alternative.
Store leftovers in airtight containers for 3-4 days.
