Ingredients
4 boneless chicken breasts (2 lbs total)
12 oz penne pasta
1 cup sun-dried tomato pesto
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1 small onion, diced
dried oregano
dried garlic
Salt and pepper to taste
2 tbsp olive oil
Instructions
Preheat oven to 400°F (200°C) for chicken finishing
Season chicken with salt, pepper, oregano, and garlic
Heat olive oil in skillet, brown chicken on all sides
Place chicken in slow cooker, add onions, pesto, 1 cup water, and olive oil
Cook on LOW 3-4 hours
Add uncooked pasta (remove lid and stir), cook 15-20 minutes
Stir in heavy cream and Parmesan
Serve in oven at 400°F (200°C) for 10 minutes to crisp edges
Notes
Adjust ingredients for larger crowds (doubles well)
Add peas or broccoli during final 20 minutes for veggie boost
Cook time can extend up to 6 hours (LOW) without overcooking
