Ingredients
2 (6 oz each) boneless skinless chicken breasts
1/2 cup heavy cream
1 1/2 cups chicken broth
1/2 cup sun-dried tomatoes (oil-free)
1 cup chopped fresh spinach
1/4 cup grated parmesan cheese
1 clove garlic, minced
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
8 oz orzo pasta
1 tbsp olive oil
Instructions
Sauté chicken in olive oil until golden (5-7 minutes)
Transfer to slow cooker and add garlic, Italian seasoning, salt, and pepper
Top with sun-dried tomatoes, broth, and cream
Cook on LOW 3.5 hours
Add orzo 15 minutes before serving and spinach during last 5 minutes
Stir in parmesan and adjust seasoning
Notes
Add pasta and spinach later to prevent sogginess
Use gluten-free orzo if needed
Substitute kale for spinach if preferred
Cool and refrigerate for 3-4 days
