2 lbs boneless skinless chicken thighs
3 large yellow onions, sliced
2 tablespoons olive oil
4 tablespoons butter
3 cloves garlic, minced
1 cup low sodium chicken broth
2 tablespoons balsamic vinegar
1 teaspoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
4 slices Swiss cheese, optional
Instructions
Heat 2 tablespoons olive oil and 4 tablespoons butter in a skillet over medium heat. Add sliced onions; sauté for 10 minutes until golden. Stir in garlic and cook 1 minute. Transfer to the slow cooker. Layer chicken thighs on top of the onion mixture. Sprinkle with thyme, salt, and pepper. Drizzle with chicken broth, balsamic vinegar, and Worcestershire sauce. Cover and cook on low 6-8 hours or high 3-4 hours. Top with Swiss cheese slices (if using) 30 minutes before serving.
Notes
