Ingredients
1 lb ground chicken
1/2 cup breadcrumbs
2 tbsp soy sauce (low-sodium)
2 tbsp packed light brown sugar
1 clove garlic, minced
1/2 cup chicken broth
2 tbsp honey (adjust to taste)
1 egg
1 tsp sesame seeds
1/2 tsp toasted white sesame oil (optional)
1/4 tsp ginger, grated
Instructions
In a large bowl, combine ground chicken, breadcrumbs, 1½ tbsp soy sauce, 3 tbsp honey, garlic, ginger, egg, and 1 tbsp chicken broth. Mix gently but thoroughly.
Shape mixture into 1.5-inch meatballs and place in a greased slow cooker.
In a small bowl, mix remaining ½ tbsp soy sauce, 1 tbsp honey, and 1 cup chicken broth. Pour half into the slow cooker over meatballs.
Cook on low for 3-4 hours. Uncover and stir in sesame seeds halfway during cooking.
Add remaining glaze mixture just before serving and gently toss meatballs to coat. Let rest 10 minutes before serving.
Notes
For greater nuttiness, add 1 tbsp grated garlic into meat mix.
Use olive oil as a greasing agent if non-vegan.
Reheats well in microwave or oven (350°F 15-20 min).
Soups or green vegetables pair perfectly with this dish.
