Ingredients
2.5 lbs bone-in skin-on chicken thighs
2 cups diced tomatoes (canned or fresh)
1/4 cup kalamata olives
1/4 cup capers, drained
1 red onion, chopped
2 garlic cloves, minced
2 tbsp olive oil
2 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
Zest and juice of 1 lemon
1/4 cup fresh parsley, chopped
Instructions
Heat olive oil in a skillet and sear chicken thighs for 3-4 minutes per side until golden
Transfer Chicken to slow cooker. Return skillet to heat and sauté onion, garlic, oregano, and capers until fragrant
Add tomatoes, olives, lemon zest, and remaining seasonings to the skillet
Transfer skillet mixture to the slow cooker
Cook on HIGH 6 hours or LOW 8 hours until chicken is tender
Stir in fresh parsley and adjust seasoning before serving
Serve with cooked rice, crusty bread, or steamed vegetables
Notes
For extra flavor, cook capers directly in the skillet before adding to slow cooker
Adjust brininess levels based on olive/caper preferences
Best reheated gently for enhanced sauce consistency
