Ingredients

1.5 lbs boneless chicken thighs
10 oz spaghetti noodles
4 cloves garlic, minced
1 tbsp grated fresh ginger
3 tbsp soy sauce (low sodium preferred)
2 tbsp sesame oil
1 tbsp honey
1/4 cup chicken broth
2 green onions, sliced
1 tbsp sesame seeds, toasted
1/2 tsp black pepper
1 tbsp rice vinegar

Instructions

Season chicken thighs with black pepper and salt.
Add garlic, ginger, soy sauce, sesame oil, honey, chicken broth, and rice vinegar to the slow cooker.
Place chicken on top of the sauce and cover.
Cook on low for 6-7 hours or high for 3-4 hours until chicken is tender and registers 165°F.
15 minutes before serving, add spaghetti to the slow cooker and stir to coat in sauce.
Once noodles are tender, transfer to bowls and top with green onions and toasted sesame seeds.

Notes

Toasting sesame seeds in a skillet until golden enhances their nutty flavor.
For gluten-free option, use gluten-free soy sauce and udon noodles.
Leftovers store well in airtight containers for up to 2 days.
