Ingredients
8 oz elbow pasta or rotini
6 strips cooked crispy turkey bacon, crumbled
1 cup shredded sharp cheddar cheese
1/4 cup chopped red onion
1/2 cup shredded carrot
1/2 cup chopped roasted bell pepper
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1/2 cup olive oil
3 tbsp apple cider vinegar
2 tbsp Dijon mustard
2 tsp smoked paprika
1/2 tsp chipotle powder
1 tsp honey
Salt and black pepper to taste
Instructions
Cook pasta according to package instructions, then drain and rinse with cold water
Heat a skillet and cook turkey bacon until crispy. Let cool, then crumble
In a large bowl, mix olive oil, vinegar, Dijon mustard, smoked paprika, chipotle powder, honey, salt, and pepper to create dressing
Add cooled pasta, crumbled bacon, cheese, red onion, carrot, and pepper to the bowl. Toss well to coat
Mix in fresh herbs just before serving
Notes
For best results, refrigerate at least 2 hours before serving
Use gluten-free pasta for a gluten-free option
The dressing can be doubled for a richer flavor
