1 teaspoon salt

2 tablespoons plain yogurt (for tzatziki, optional)
1 small cucumber, grated (for tzatziki, optional)
1 clove garlic, minced (for tzatziki, optional)

Instructions

Combine chicken thighs, olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl. Mix thoroughly to coat.
Marinate for at least 15 minutes (or up to 24 hours in the refrigerator).
Preheat grill or stovetop pan to high heat. Cook chicken for 6-8 minutes per side until charred and cooked through.
For tzatziki, stir yogurt, grated cucumber, and minced garlic in a small bowl. Refrigerate while cooking chicken.
