Ingredients
1 ½ lbs cooked chicken breast, cubed
1 cup fresh mango, dice
¼ cup diced habanero
8 oz rotini pasta, cooked al dente
½ cup diced red bell pepper
¼ cup diced red onion
¼ cup chopped fresh cilantro
¼ cup olive oil
2 tbsp lime juice
1 tbsp honey
1 tsp chili powder
¾ tsp salt
½ tsp black pepper
1 minced garlic clove
Instructions
Bring a large pot of salted water to boil. Cook pasta until al dente, drain.
In a large bowl, whisk olive oil, lime juice, honey, chili powder, salt, pepper, and garlic.
Add cubed chicken, mango, habanero, red bell pepper, red onion, and cilantro to the bowl. Toss with pasta until fully coated in dressing.
Chill for 10 minutes before serving to let flavors meld. Adjust spice level by adding more habanero or reducing it.
Notes
Adjust habanero quantity based on spice preference; store leftovers in an airtight container for up to 3 days.
Serves best at room temperature.
Add grilled corn or avocado for extra texture if desired.
