A refreshing, low-calorie dessert that delivers satisfying sweetness without the guilt of added sugars, perfectly supporting your weight management goals.

  • Total Time: 4 hours 25 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 2 tablespoons unflavored gelatin powder (2 packets)
  • ½ cup cold water
  • 1 cup boiling water
  • ¼ to cup sugar-free sweetener (erythritol, allulose, or monk fruit)
  • 2 cups unsweetened fruit juice
  • 1 to cups fresh berries or fruit pieces
  • 1 tablespoon lemon juice
  • ¼ teaspoon sea salt

Instructions

  1. Pour ½ cup of cold filtered water into a small mixing bowl and sprinkle 2 tablespoons of unflavored gelatin powder directly onto the surface to bloom for 5 minutes.
  2. Bring 1 cup of fresh water to a boil, then pour it slowly over the bloomed gelatin while stirring constantly with a whisk until completely smooth.
  3. Stir in ¼ to ⅓ cup of sugar-free sweetener and 2 cups of unsweetened fruit juice slowly to ensure smooth integration.
  4. Mix in 1 tablespoon of fresh lemon juice and ¼ teaspoon of sea salt, then allow the mixture to cool to room temperature for approximately 30 minutes.
  5. Pour the cooled mixture into individual serving dishes or a mold, distribute 1 to 1½ cups of fresh berries evenly, and chill in the refrigerator for at least 4 hours until fully set.

Notes

Bloom gelatin properly in cold water for 5 minutes to prevent unwanted lumps. Avoid using fresh pineapple or papaya, as their natural enzymes prevent the gelatin from setting properly.
