Ingredients
Scale
- 2 tablespoons unflavored gelatin powder (2 packets)
- ½ cup cold water
- 1 cup boiling water
- ¼ to ⅓ cup sugar-free sweetener (erythritol, allulose, or monk fruit)
- 2 cups unsweetened fruit juice
- 1 to 1½ cups fresh berries or fruit pieces
- 1 tablespoon lemon juice
- ¼ teaspoon sea salt
Instructions
- Pour ½ cup of cold filtered water into a small mixing bowl and sprinkle 2 tablespoons of unflavored gelatin powder directly onto the surface to bloom for 5 minutes.
- Bring 1 cup of fresh water to a boil, then pour it slowly over the bloomed gelatin while stirring constantly with a whisk until completely smooth.
- Stir in ¼ to ⅓ cup of sugar-free sweetener and 2 cups of unsweetened fruit juice slowly to ensure smooth integration.
- Mix in 1 tablespoon of fresh lemon juice and ¼ teaspoon of sea salt, then allow the mixture to cool to room temperature for approximately 30 minutes.
- Pour the cooled mixture into individual serving dishes or a mold, distribute 1 to 1½ cups of fresh berries evenly, and chill in the refrigerator for at least 4 hours until fully set.
Notes
Bloom gelatin properly in cold water for 5 minutes to prevent unwanted lumps. Avoid using fresh pineapple or papaya, as their natural enzymes prevent the gelatin from setting properly.
