Ingredients
8 bone-in, skin-on chicken thighs (about 3 lbs total)
2 large onions, thinly sliced
3 cloves garlic, minced
2 tbsp olive oil
1 tbsp sumac
1 tsp ground cumin
1 tsp sweet paprika
2 tbsp lemon juice
1 tsp salt
1/2 tsp black pepper
Instructions
Preheat oven to 375°F (190°C)
Heat olive oil in a large skillet over medium heat
Place chicken in skillet skin-side down; cook 5-6 minutes until golden, flip and cook 4 minutes
Remove chicken; season with sumac, cumin, paprika, salt, and pepper
Pour onions and garlic over chicken in skillet
Transfer to oven, cook 20-25 minutes until chicken is done and onions are caramelized
Spoon onion mixture over chicken before serving with rice or roasted vegetables
Notes
Use chicken breasts for a quicker cook time. The collagen from the skin is essential for crispy texture. For extra depth, add sautéed herbs like parsley or mint at the end. Store leftovers in an airtight container for up to 3 days.
