Ingredients

8 bone-in, skin-on chicken thighs (about 3 lbs total)
2 large onions, thinly sliced
3 cloves garlic, minced
2 tbsp olive oil
1 tbsp sumac
1 tsp ground cumin
1 tsp sweet paprika
2 tbsp lemon juice
1 tsp salt
1/2 tsp black pepper

Instructions

Preheat oven to 375°F (190°C)
Heat olive oil in a large skillet over medium heat
Place chicken in skillet skin-side down; cook 5-6 minutes until golden, flip and cook 4 minutes
Remove chicken; season with sumac, cumin, paprika, salt, and pepper
Pour onions and garlic over chicken in skillet
Transfer to oven, cook 20-25 minutes until chicken is done and onions are caramelized
Spoon onion mixture over chicken before serving with rice or roasted vegetables
