Ingredients
1.5 pounds boneless skinless chicken breast
1/2 cup oil-packed sun-dried tomatoes, drained
2 tablespoons olive oil
3 cloves garlic, minced
3 cups fresh spinach, packed
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat oven to 200°F (95°C)
Heat oil in a skillet over medium-high heat
Season chicken with salt and pepper, then sear 4-5 minutes per side
Remove chicken and set aside
Add garlic to the skillet; cook 1-2 minutes
Add sun-dried tomatoes and spinach; sauté 2-3 minutes
Stir in Italian seasoning and remaining salt and pepper
Return chicken to the skillet and bake 8-10 minutes until cooked through
Notes
Substitute chicken thighs for richer flavor
Use avocado oil for higher smoke point
Swap spinach with kale or arugula
Drain excess oil from tomatoes if oily
