Ingredients
4 boneless, skinless chicken thighs
1 cup fresh pineapple chunks
1/2 cup soy sauce (low sodium optional)
1/4 cup brown sugar
1 tbsp rice vinegar
1 tsp minced garlic
1 tsp minced ginger
1 tbsp cornstarch
1 tbsp water
1 tbsp vegetable oil
2 green onions (sliced)
1 tbsp sesame seeds
Instructions
Preheat oven to 400°F (200°C)
Whisk soy sauce, brown sugar, rice vinegar, garlic, ginger, and 1/2 cup pineapple chunks in a bowl
Marinate chicken in 2/3 of the glaze for 15 minutes
Heat vegetable oil in an oven-safe skillet; sear chicken for 2-3 minutes per side
Transfer to oven, bake 15 minutes
Mix cornstarch with water and remaining pineapple chunks, simmer to thicken
Brush remaining glaze onto chicken during last 5 minutes of baking
Sprinkle with green onions and sesame seeds before serving
Notes
Use fresh pineapple over canned to avoid excess syrup
Increase cornstarch slightly if glaze is too thin
For a tangier flavor, add 1 tbsp lime juice to the glaze
Chill leftovers in an airtight container for up to 3 days
