Instructions

  1. Bring vegetable or chicken broth to a gentle boil in a large pot over medium-high heat.
  2. Add minced garlic and fresh ginger to the broth.
  3. Stir continuously for 2 minutes to release the aromatics.
  4. Pour soy sauce into the simmering broth.
  5. Whisk until fully incorporated.
  6. Add water to adjust the broth intensity.
  7. Reduce heat to medium and keep the broth at a gentle simmer.
  8. Increase the broth to a rolling boil when ready to cook the noodles.
  9. Break apart the ramen noodles gently.
  10. Add both packages of noodles directly to the boiling broth.
  11. Stir continuously for the first minute to prevent sticking.
  12. Cook for 3 to 4 minutes until tender but still slightly firm.
  13. Sauté sliced mushrooms in a separate skillet over medium-high heat for 3 to 4 minutes until golden.
