- 2 large soft-boiled eggs
- 4 ounces mushrooms, sliced
- 1/2 cup bamboo shoots
- 1 tablespoon sesame seeds
- 2 cups water
Instructions
- Bring vegetable or chicken broth to a gentle boil in a large pot over medium-high heat.
- Add minced garlic and fresh ginger to the broth.
- Stir continuously for 2 minutes to release the aromatics.
- Pour soy sauce into the simmering broth.
- Whisk until fully incorporated.
- Add water to adjust the broth intensity.
- Reduce heat to medium and keep the broth at a gentle simmer.
- Increase the broth to a rolling boil when ready to cook the noodles.
- Break apart the ramen noodles gently.
- Add both packages of noodles directly to the boiling broth.
- Stir continuously for the first minute to prevent sticking.
- Cook for 3 to 4 minutes until tender but still slightly firm.
- Sauté sliced mushrooms in a separate skillet over medium-high heat for 3 to 4 minutes until golden.
- Drain the mushrooms on paper towels and set aside.
- Bring a small pot of water to a rolling boil.
- Gently add the eggs and boil for exactly 6 to 7 minutes.
- Transfer the eggs immediately to an ice bath.
- Peel the cooled eggs under cool running water.
- Slice the eggs in half lengthwise.
- Ladle the cooked noodles and hot broth into two serving bowls.
- Arrange the soft-boiled egg halves in the center of each bowl.
- Add sautéed mushrooms, bamboo shoots, and sliced green onions around the eggs.
- Drizzle toasted sesame oil over each bowl.
- Sprinkle sesame seeds on top.
- Serve immediately while the broth is hot.
Notes
Use fresh garlic and ginger for the best broth flavor, keep the noodles slightly firm, and add sesame oil at the end to preserve its rich aroma.
