Ingredients
- 350g Bread Flour (plus 30g for Tangzhong)
- 180ml Whole Milk (plus 150ml for Tangzhong)
- 5g Instant Yeast
- 40g Unsalted Butter (softened)
- 30g Sugar
- 5g Salt
Instructions
- Whisk together 30g of bread flour and 150ml of milk in a small saucepan until completely smooth, then heat over medium-low heat while stirring constantly until it thickens into a gelatinous paste.
- Remove the tangzhong starter from heat, transfer to a small bowl, cover with plastic wrap pressed directly against the surface, and cool to room temperature.
- Combine flour, sugar, salt, and yeast in a large mixing bowl or stand mixer bowl.
- Add the cooled tangzhong starter along with the remaining milk to the dry ingredients and knead on medium speed until the dough pulls away from the sides of the bowl.
- Incorporate the softened butter into the dough one small piece at a time while continuing to knead until it passes the windowpane test.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm spot for 60 minutes.
- Punch down the proofed dough, divide it into three equal portions, shape into tight balls, roll into ovals, fold into thirds, and place into a greased loaf pan.
- Let the shaped dough rise a second time until it reaches the rim of the pan, then bake at 350°F for 30 minutes until golden brown and hollow sounding when tapped.
Notes
Ensure the tangzhong starter is completely cool before adding yeast to prevent killing active cultures. Use a digital scale to measure flour accurately, as packed cups can make the bread dense. Knead until smooth and elastic, and brush the top with melted butter immediately after baking for a soft, shiny finish.
