Ingredients
- 12 oz Pasta (linguine or spaghetti; bronze-cut recommended)
- 2 cups Cherry Tomatoes (halved for maximum juice release)
- 4 cloves Garlic Cloves (thinly sliced for even distribution)
- 4 cups Vegetable Broth (low-sodium)
- 2 cups Fresh Spinach (added at the very end)
- 2 tbsp Olive Oil (extra virgin)
- 1/2 cup Parmesan Cheese (high-quality aged)
Instructions
- Place uncooked pasta in an even layer at the bottom of a large skillet or deep pan.
- Scatter halved cherry tomatoes and sliced garlic over the pasta strands.
- Pour vegetable broth over the ingredients and drizzle with olive oil.
- Bring liquid to a rolling boil over medium-high heat while stirring occasionally.
- Reduce heat to a steady simmer and cook, stirring every two minutes, until pasta is al dente and broth reduces into a thick sauce.
- Fold in fresh spinach during the final minute of cooking until wilted.
- Remove pan from heat and stir in parmesan cheese before serving.
Notes
Monitor liquid levels closely to ensure pasta cooks through without drying out. Use wider pans to increase surface area for even cooking and faster reduction. Season with salt gradually as the broth concentrates during simmering.
