Ingredients

4 bone-in, skin-on chicken thighs
1 tablespoon olive oil
1 tablespoon zaatar blend (contains sesame seeds, sumac, thyme)
1 teaspoon honey
Zest of 1 lemon
Juice of 1 lemon (divided)
3 garlic cloves (minced)
Salt and black pepper to taste
1 tablespoon chopped fresh parsley (for garnish)

Instructions

Preheat oven to 400°F (200°C). In a bowl, whisk olive oil, zaatar, honey, lemon zest, half of the lemon juice, and minced garlic. Season chicken thighs with salt and pepper, then coat evenly with the marinade.
Heat a skillet over medium-high heat. Sear thighs skin-side down for 5 minutes until golden. Flip and sear 2 minutes. Transfer skillet to the oven and bake 18-22 minutes, until chicken is fully cooked.
Return skillet to stovetop. Sauté parsley briefly, then spoon over chicken with remaining lemon juice. Garnish and serve warm.

Notes

Use pomegranate molasses instead of honey for a festive twist. For extra crisp, pat chicken dry before searing. Let chicken rest 5-10 minutes before serving to retain juices.
