Instructions

  1. Pour 1/4 cup cold water into a small bowl and sprinkle the unflavored gelatin evenly over the surface without stirring.
  2. Allow the gelatin to bloom for 5 minutes until it absorbs the water and softens completely.
  3. Heat the bloomed gelatin over a pot of gently simmering water or microwave it on 50% power in 10-second intervals, stirring between intervals until completely dissolved and transparent.
  4. Remove the dissolved gelatin from the heat and allow it to cool to room temperature for 2 to 3 minutes.
  5. Scoop the plain Greek yogurt into a medium mixing bowl and add your chosen flavoring.
  6. Whisk the yogurt and flavoring together for approximately 30 seconds until evenly combined.
  7. Slowly pour the cooled dissolved gelatin into the yogurt mixture while whisking constantly.
  8. Continue whisking for 1 to 2 minutes until the mixture is smooth and homogeneous.
  9. Divide the mixture evenly among four serving glasses or small bowls.
  10. Cover the containers loosely with plastic wrap.
  11. Refrigerate for a minimum of 4 hours, or overnight for a firmer texture.
  12. Remove from the refrigerator 5 minutes before serving and enjoy chilled.

Notes

Allow the dissolved gelatin to cool to room temperature before adding it to the Greek yogurt to prevent a grainy texture. Bloom the gelatin fully before heating, and chill for at least 4 hours for the best consistency.
