  • Total Time: 33 minutes
  • Yield: 24 bites 1x

Ingredients

Scale
  • 1/2 cup unsalted butter
  • 4 ounces dark chocolate, chopped
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/3 cup all-purpose flour
  • 2 tablespoons cocoa powder
  • 1/2 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, softened
  • 1/3 cup packed brown sugar
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup heat-treated all-purpose flour
  • 1/3 cup mini chocolate chips
  • 1/4 teaspoon sea salt

Instructions

  1. Preheat the oven to 350°F.
  2. Line a 24-cup mini muffin tin with paper liners or lightly grease each cup.
  3. Combine butter and chopped dark chocolate in a microwave-safe bowl.
  4. Heat in 30-second intervals, stirring between each, until melted and smooth.
  5. Whisk granulated sugar into the melted chocolate mixture until glossy.
  6. Add eggs one at a time, stirring well after each addition.
  7. Stir in vanilla extract.
  8. Sift flour, cocoa powder, and sea salt into the wet mixture.
  9. Fold gently until just combined.
  10. Divide the brownie batter evenly among the mini muffin cups, filling each about three-quarters full.
  11. Bake for 12 to 14 minutes until the edges are set and the centers remain soft.
  12. Remove from the oven and let cool slightly.
  13. Beat softened butter until light and fluffy.
  14. Add brown sugar and granulated sugar, then mix until pale and creamy.
  15. Stir in vanilla extract.
  16. Fold in heat-treated flour until just combined.
  17. Mix in mini chocolate chips and sea salt.
  18. Spoon one generous teaspoon of cookie dough topping onto each cooled brownie bite.
  19. Press gently to adhere the topping.
  20. Return to the oven and bake for 4 to 5 minutes until the cookie dough topping sets but stays soft.
  21. Let the bites rest in the muffin tin for 10 minutes.
  22. Transfer to a wire rack and cool completely before serving.

Notes

Use heat-treated flour for the edible cookie dough topping, avoid overmixing the brownie batter, and let the bites cool completely so the layers set properly.
