Ingredients
8 oz (225g) dried rice noodles
2 cups shredded rotisserie chicken
2 tbsp tamarind paste
3 tbsp fish sauce
1 tbsp palm sugar or brown sugar
2 cups bean sprouts
4 green onions, sliced
1/4 cup roasted peanuts, chopped
1 lime, cut into wedges
1 to 2 tsp chili flakes (optional)
2 tbsp vegetable oil
2 eggs, lightly beaten
1 cup crushed ice
Instructions
Cook rice noodles according to package instructions, drain, and set aside.
Warm shredded rotisserie chicken in a skillet over medium heat until heated through.
In a small bowl, mix tamarind paste, fish sauce, and palm sugar into a sauce.
Heat oil in a large wok or pan, stir-fry bean sprouts and green onions until tender.
Push veggies to the pan’s edge, scramble eggs in the center, then combine with chicken.
Add cooked noodles and sauce, tossing to coat evenly. Add crushed ice to cool slightly.
Serve with chopped peanuts, lime wedges, and additional chili flakes.
Notes
Use halal-certified rotisserie chicken if preferred
Adjust sauce intensity by adding more or less tamarind paste
Add tofu for a protein boost
